Keto Shakshuka with Smoked Sausage

Ingredients
  

  • 6 Eggs
  • 500 Grams Diced Tomato
  • 250 Grams Smoked Sausage (Spanish Chorizo, Sujuk, Kielbasa, Andouille etc) Diced.
  • 125 Grams Red Bell Pepper About 1 red bell pepper.
  • 50 Grams White Onion About half an onion.
  • 2 Garlic Cloves Minced.
  • 2 Tbsp Tomato Paste
  • 2 Tbsp Olive Oil
  • 1 Tbsp Fresh Cilantro
  • 1 Tbsp Parsley
  • 60 Grams Feta Cheese
  • 2 Tsp Chili Powder
  • 1/2 Tsp Ground Cumin
  • 1/4 Tsp Salt
  • 1/4 Tsp Black Pepper

Instructions
 

  • Heat olive oil in a large pot over medium-high heat.
  • Sauté diced onion and red bell pepper until soft. About 5 minutes.
  • Add minced garlic and sauté for another 1-2 minutes.
  • Add diced smoked sausage and sauté for another 3-5 minutes.
  • Add spices, stir and cook for 1-2 minutes.
  • Add tomato paste and cook for another 1-2 minutes.
  • Add diced tomatoes and cook for about 15-20 minutes. Cooking time will vary depending on how much liquid the tomatoes have. You want the sauce to have a nice consistency that isn't too watery.
  • Once the tomatoes are done cooking, make 6 wells in the pan with the back of a spoon.
  • Crack one egg into each well.
  • Cover the pan and cook for 5-8 minutes, or until the eggs are cooked to your liking.
  • Garnish with crumbled feta cheese, chopped parsley and cilantro.
  • Enjoy!
