Heat olive oil in a large pot over medium-high heat.
Sauté diced onion and red bell pepper until soft. About 5 minutes.
Add minced garlic and sauté for another 1-2 minutes.
Add diced smoked sausage and sauté for another 3-5 minutes.
Add spices, stir and cook for 1-2 minutes.
Add tomato paste and cook for another 1-2 minutes.
Add diced tomatoes and cook for about 15-20 minutes. Cooking time will vary depending on how much liquid the tomatoes have. You want the sauce to have a nice consistency that isn't too watery.
Once the tomatoes are done cooking, make 6 wells in the pan with the back of a spoon.
Crack one egg into each well.
Cover the pan and cook for 5-8 minutes, or until the eggs are cooked to your liking.
Garnish with crumbled feta cheese, chopped parsley and cilantro.
